Is there a way to enable coloring of Elevation ranges?
I have made some maps with lots of elevation data and it just shows up flat all as one colors regardless of settings in the MFD. Maybe I'm missing something?

Elevation is not one of the set up ways to customize a chart on the chart plotter through custom palettes.

You can set a polygon color the same way you would set any coloring based on values.  Depth Areas being one example.
