The standard GIS procedure for this is called "dissolve".

You might still have gaps where end points aren't at the same position or at the edges of the lake.

If the lines not overlays/touch, no GIS programm can work corekt, except there is an involved, tolerance distance option.
And when you have such open lines as your river estuary, first you must close the line by hand.

The line from CAD to polyline shape is a polyline ZM (and possible other problems). With additional drawing and the tool "feature in polygon" (not QGIS) i can create a closed polygon. You can send me the shoreline, and i will take a look, what i can do.

The problem is that I have to scan a lot and not a little bit. Each line has more than 1000Km and I have curves of 2.5 in 2.5m. The maximum quota is 152.5.
I tested the OSM and it did not fit very well in my maximum quota line.
(I send photos with the background of the attached OSM and coast line)
I already added the islands.
The dxf file of the coastline has more 5000kb I can not send through the forum. I can send by email or Wetranfer if I say an email
valid.

OSM is typically not survey grade for water bodies.  The focus is on road features and most other features have a reasonable level of accuracy.

I have your files and need a bit more time, because there is a lot of holes in the lines.
I would also test  another solution. For this please can you tell me the one or two dates (day/year), when the shoreline/water level was "0" as in your datas.

Another question, what is the source of your files (website)? Is there only CAD files as option for a download. In my country i can find such files?

Geotiff als WGS84 with the IMC raster mode.
But why you not convert the height line into: shoreline = 0 and depth lines 1, 2, ... n meters?
